This retro recipe came from my personal recipe collection, and was originally shared with me from my sister. It was one of our favorite recipes as newlyweds (decades ago!), and is still one of our favorite comfort food casserole recipes.

  • The biscuits on the top are so delicious! And, canned biscuits makes this step easy to do!

Ingredients for Stroganaff Hamburger Casserole with Canned Biscuits

  • Lean or extra lean ground beef- This is the protein base for this recipe. You’ll need 1 pound.
  • Canned sliced mushrooms, drained – Mushrooms add in a great addition to this stroganaff flavored casserole. I use the smallest can of mushrooms I can find.
  • French fried onions add a flavorful crunch on the top. (You’ll need 1 cup of them)
  • Sour cream adds a creamy smoothness, and helps with the classic stroganaff flavor. (You’ll need 1 cup)
  • Cream of mushroom soup adds flavor and creaminess, and makes this casserole recipe quick and convenient, too. (Grab yourself 1 can for this recipe)
  • Refrigerator biscuits are the yummy top to this casserole (You’ll need one can).
  • 1 egg
  • 1/2 teaspoon salt

Step by Step Instructions for Stroganaff Hamburger Casserole

The following is a quick snippet of how this recipe comes together with pictures. Please refer to the recipe card following it for more detailed instructions – and it’s printable, so you can print it and save it in your binder for later!

  1. Brown the hamburger in a skillet.
  2. Add some of the french fried onions and mushrooms to the hamburger.
  3. Heat the mushroom soup in a medium saucepan and stir in the sour cream.
  4. Cut refrigerator biscuits in half and arrange around the edges of the pan.
  5. Sprinkle french fried onions on the top.
  6. Spread the sour cream topping mixture over the top of the casserole.
  7. Bake at 375 degrees for 25-30 minutes or until biscuits are golden brown and they are done in the center.

Stroganaff Hamburger Casserole with Canned Biscuits Recipe

Craving a comforting meal that’s both satisfying and easy? If so, you’re going to love this easy take on beef stroganaff! This Hamburger Casserole recipe base is made with a mixture of ground beef, french fried onions, and mushrooms. The creamy, flavorful stroganoff sauce is made easy thanks to canned mushroom soup, and the topping of golden-brown canned biscuits and a generous sprinkle of crunchy onions makes it over-the-top delicious. It’s a hearty and convenient meal that will have your family clamoring for seconds.

Ingredients

  • 1 pound lean ground beef
  • 4 ounces canned sliced mushrooms, drained
  • 1 cup french fried onions
  • 1 cup sour cream, divided
  • 1 can cream of mushroom soup
  • 1 can refrigerator biscuits
  • 1 egg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375 degrees. In a large skillet, brown the hamburger over medium high heat. Break apart the meat with a spatula and stir and toss it around as it cooks. Once it is browned and there is no pink on the meat, drain the grease from the pan.
  2. Stir the drained mushrooms and 1/2 cup french friend onions into the browned ground beef.
  3. Pour the ground beef mixture into the bottom of a casserole dish.
  4. In a small saucepan, heat up the cream of mushroom soup and stir in 1/2 cup of the sour cream.
  5. Pour the soup mixture over the top of the hamburger mixture in the casserole dish.
  6. Open the canned biscuits up and cut each one in half.
  7. Arrange the biscuits on the top of the casserole dish starting around the edges. (Note: Spread them out a bit more than I did in the picture so there are some in the middle as well. It will help them to bake more evenly.)
  8. Sprinkle 1/2 cup french fried onions on the top of the biscuits.
  9. Mix together a topping of 1/2 cup sour cream, 1 egg, and 1/2 teaspoon salt and pour over the top of the biscuits and french fried onions.
  10. Bake at 375 degrees for 25-30 minutes or until biscuits are golden brown and they are done in the center.
  11. Garnish with some more french fried onions if you’d like.

  1. For freezing, do you just make the mixture and freeze it and put the biscuits on at time of baking? Also, have you ever tried substituting plain greek yogurt for the sour cream? Thanks!!
