Mini Bacon Wrapped Meatloaf Recipe

This bacon wrapped meatloaf recipe is a new take on classic meatloaf. With a mix of ground pork and beef, it’s formed into individual meatloaf portions and covered with strips of bacon. These little mini meatloaf portions are perfect for a weeknight dinner with the family and even a little “fancy” making it perfect for guests, too.

When we were visiting my family in Montana last Summer, my sister-in-law fixed us dinner with the tastiest bacon wrapped meatloaf formed into individual mini meatloaf portions. I thought they were so cute – and just served these to my family. They were a big hit!

Ingredients for Mini Bacon Wrapped Meatloaf

  • 3/4 pound lean ground beef
  • 3/4 pound lean ground pork – If you’d rather not mix beef and pork, you can use all beef in this recipe.
  • 1 medium onion, diced
  • 1 egg
  • 1 cup panko bread crumbs
  • 1 cup milk
  • Salt & pepper
  • 8 slices bacon

Step by Step Instructions for Bacon Wrapped Meatloaf

  1. In a large mixing bowl, mix together the ground meat, diced onion, egg, bread crumbs, salt & pepper and milk. Use clean hands to mix together well so it all the ingredients are incorporated well.
  2. Divide meat mixture into 8 individual portions and form into a mini meatloaf shape and place on a baking sheet that has sides.
  3. Cut each strip of bacon in half. Place each half in a criss-cross position on each individual meatloaf and tuck the ends under.

  1. Bake in an oven that has been preheated to 350 degrees for 50 minutes. If you’d like the bacon extra crispy, turn the oven to broil and put oven rack towards the top of the oven and bake on broil for 3-5 minutes. (Watch it closely so it doesn’t burn!)

Remove the meatloaf from the pan and transfer to a platter to serve.

To make for easier clean up, you may want to line your baking sheet with parchment paper, or even put a rack on the baking pan to set the meatloaf on. The grease will then drip down into the pan while the meatloaf bakes.

What to serve with bacon wrapped meatloaf

Our family are big fans of ketchup, so we squirt a little on the top of these. But, barbecue sauce would compliment it well, too.

Common side dishes for meatloaf are smashed potatoes, baked potatoes, mashed potatoes, potato salad, and cheesy potatoes.

Some people have told me they enjoy meatloaf sandwiches with leftover meatloaf. I think that sounds delicious with a bowl of potato soup!

How to make freeze ahead bacon wrapped meatloaf in individual servings

Freezing ahead this little mini meatloaf recipe is perfect if you are cooking for one or two, or if you are preparing for guests.

To freeze ahead, form the meatloaf according to the directions above, but do not bake. Place the individual meatloaf portions on a parchment lined baking sheet and freeze for 2 hours. Then remove them from the freezer and place in a ziploc bag or airtight container.

When ready to bake the meatloaf, remove the number of individual portions you’d like to bake. You can bake them from frozen, but add extra baking time to accomodate. Or, you can thaw them first and bake them for the time given above.

Variations and Substitutions for this mini meatloaf recipe

  • Quick or old fashioned oats can be substituted for the bread crumbs.
