Before Christmas, my husband and I received a pretty little gift bag tied with a ribbon from some friends from church. Inside, we found a sweet treat unlike anything I’d ever tried before. One bite in, and I was hooked! Decadent, chocolaty, with little bursts of crunchy, nutty deliciousness—I knew right away that I needed the recipe.

I texted the thoughtful couple who had gifted us these treats, thanking them and (of course) asking for the recipe. Thankfully, they were happy to share – so I’m sharing it with you, too!

After a little research, I discovered this recipe is a variation of the classic saltine cracker toffee, sometimes called “Christmas Crack.” But this version? It’s even better! Instead of saltines, the base is made with graham crackers, giving it a rich, caramelized flavor. The unique twist? Chopped nuts and dried cranberries, which add the perfect balance of crunch and chew – sort of like a fruit and nut bar.

Fair warning—these toffee bars are completely addictive! They make a big batch, so they’re perfect for gifting, holiday dessert trays, or just a treat-yourself moment with a hot cup of coffee.

  • Graham crackers
  • Butter – I used unsalted butter, since I was using salted almonds for some salty-ness
  • Brown sugar – Light or dark brown sugar is fine
  • Chocolate chips – I used semi-sweet chocolate chips, but you can use whatever kind you prefer
  • Chopped nuts – I used salted almonds that I rough chopped in my mini food processor
  • Dried cranberries – I used craisens.

Helpful Tips When Making This Recipe

  • Reserve some chopped nuts to sprinkle on the warm chocolate for a nice topping.
  • Let the toffee set fully before breaking or cutting. I set the pan in the freezer for a few minutes to speed up the process.
  • Work quickly through each step. This recipe is really easy, but I didn’t linger too long on any one step! I worried a bit when some of the toffee started to peak through the chocolate as I spreaded it, but it cooled and turned out just fine.

Graham Cracker Toffee Bars with Almonds & Craisens

Graham cracker toffee bars are a dangerously delicious treat! Layers of graham crackers, rich toffee, melty chocolate, crunchy nuts and crasients make these bars absolutely addicting. Perfect for holiday trays or anytime snacking!

Ingredients

  • 1 sleeve graham crackers
  • 1 cup unsalted butter
  • 1 cup brown sugar (light or dark brown sugar works)
  • 1 1/2 cups chopped salted almonds
  • 1 cup craisens
  • 1 1/2 cups chocolate chips

Instructions

  1. Preheat the oven to 375 degrees.
  2. Line a 11 x 16 inch baking pan with parchment paper (so it goes up the sides, too). Cover the bottom of the pan with one single layer of graham crackers.
  3. In a saucepan over medium heat, melt butter and brown sugar. Cook - stirring constantly - until the butter melts completely and the mixture just comes to a boil. Remove from heat and pour over the layer of graham crackers. Spread with a spatula so it covers all the graham crackers well.
  4. Sprinkle on the craisens and 1 cup of chopped almonds.
  5. Bake for 10 minutes at 375 degrees, or until the toffee mixture is bubbling around the edges.
  6. Remove from oven and sprinkle on 1 1/2 cups chocolate chips. Return the pan to the oven for 1 or 2 minutes - or until the chocolate is soft and spreadable. Spread the chocolate evenly over the top and sprinkle with remaining 1/2 cup chopped almonds.
  7. Place in refrigerator (or freezer) until completely chilled and set. Then break or cut into pieces.
