Church Window Cookies | Easy Holiday Treat Recipe
Cathedral Windows (otherwise known as Church Window Cookies) is an easy holiday treat recipe that is a delightfully delicious no bake chocolate marshmallow log. It would be perfect as a Christmas party snack or Christmas treat gift.
A printable version of this Chocolate Marshmallow Log Christmas Cookie recipe is at the bottom of this post.
Today’s easy Christmas treat recipe is one that has a variety of names. “Church Window Cookies”, “Yuletide Slice”, and “Stained Glass Candy” are just a few variations. The old, weathered recipe card from my box says simply, “Chocolate Marshmallow Roll”.
Whatever the name -it’s delicious!
Chocolate Marshmallow Log | An Easy (no bake!) Christmas Treat
Here are the ingredients you’ll need:
- 1/2 cup butter
- 1 1/2 squares semi-sweet chocolate
- 1 egg (optional)
- 2 cups powdered sugar
- 1 package small colored marshmallows
- 1 package flaked coconut
- 1/2 cup nuts (optional, I didn’t use any)
Step 1: Melt the butter and chocolate together
This could be done in a variety of ways. I chose to use a glass bowl and microwaved the 2 ingredients together for 1 minute. Then I stirred until the chocolate squares started to melt, microwaved for 30 more seconds, and stirred again until the chocolate was completely melted. (The microwave time may vary based on the strength of your microwave.)
Step 2: Add powdered sugar and egg and beat well
Make sure the melted mixture isn’t too hot, and stir in the powdered sugar and egg. The recipe I used is very old and called for an egg, so I used one! However, I did have my hesitation in putting a raw egg into a no bake recipe. So, if you’d rather not, just omit the egg. The recipe will turn out just fine without it.
Beat the mixture together well until it’s nice and smooth.
Step 3: Add marshmallows
Pour in the whole package of marshmallows and stir until they are even distributed.
Step 4: Lay out a large sheet of wax paper and pour on a generous amount of coconut.
I used the biggest flake coconut I could find, and used almost the whole bag.
Step 5: Spoon the marshmallow mixture onto the center of the coconut and form a log shape.
Once the mixture was spooned out, I wet my hands with hot water and formed the mixture into a tight log. Then I spooned some of the coconut onto the top, and rolled the waxed paper around it.
Step 6: Chill for at least 30 minutes and then slice
Once it is nicely chilled, it will be easy to slice into nice slices.
And there they are! A pretty and delicious Christmas treat.
