I remember asking her for the recipe, and she simply handed me the Lipton Onion Soup Mix box—where it was printed on the back! I quickly copied it down, and it’s been a go-to ever since. It’s the kind of easy, reliable recipe that you can be ready with all the ingredients for—and it never disappoints!

  • Making for two people: Divide the meat mixture in half and freeze one half (uncooked) for later. Or flash freeze both of them individually on a parchment lined pan, and then transfer to a zip top freezer bag to have for later. Adjust the baking time for the smaller sized loaf. It may be cooked through faster. (Start with 40-45 minutes minutes.)
  • Freezing ahead: Prepare the meat mixture and shape it into a loaf.. Flash freeze it on a parchment lined cookie sheet until solid (a few hours). Place in an airtight container or ziptop freezer bag and label it. When ready to bake, thaw in the fridge overnight (on the parchment lined rimmed baking pan you’ll want to bake it on) and proceed with baking instructions.
  • Baking after freezing: If baking from frozen, allow extra time—bake covered with foil at 350°F for 60–70 minutes.

A tried-and-true classic, Lipton Onion Soup Meatloaf is packed with flavor and perfect for a weeknight comfort meal.

Ingredients

  • 1 pouch Lipton Onion Soup mix
  • 2 pounds lean ground beef
  • 2 eggs, slightly beaten
  • 1/4 cup ketchup
  • 3/4 cup dried bread crumbs (I prefer Panko bread crumbs)
  • 1/2 cup warm water
  • For the ketchup glaze: 1/4 cup ketchup, 2 Tablespoons brown sugar, and 1 Tablespoon worchestershire sauce

Instructions

  1. Mix all meatloaf ingredients (without the ketchup glaze ingredients) together in a large mixing bowl using clean hands. Mix it just to incorporate all the ingredients but don't overmix.
  2. Once mixed, press the meat mixture into a loaf pan. Then turn it over and transfer it to a parchment lined rimmed baking pan. (You might need to "plunk" it firmly to get it to slide out of the loaf pan.)
  3. Place the meatloaf in an oven that's been preheated to 350 degrees. While it's baking stir together the ketchup glaze ingredients. After the meatloaf has baked for 45 minutes, remove it from the oven and spread on the ketchup glaze. Return it to the oven and bake 15 more minutes.
  4. Let the meatloaf rest with a tent of aluminum foil over it for 10 minutes before slicing.
