The ingredients I use for taco meat are so simple – just an onion, pepper, ground beef and packaged taco seasoning. It can all be sauted in your favorite pan and ready to eat in under 15 minutes flat!

This quick and flavorful ground beef taco meat is quick and easy to make in one skillet—perfect for easy dinners with endless variation!
Ingredients
- 1 pound lean ground beef
- ½ onion (white or red), diced
- 1 red pepper, diced
- 1 packet taco seasoning mix (use the directions on the back)
Instructions
- In a large skillet (I love using my cast iron), heat a drizzle of olive oil.
- Sauté the onions and red pepper until they start to soften.
- Add the ground beef and cook until browned, breaking it up as it cooks.
- Stir in the taco seasoning and the amount of water listed on the packet.
- Cover and simmer for a few minutes to let the flavors blend.
Notes
If there is a lot of grease after the beef is browned, drain it off of the pan before adding in the seasoning mix.
That’s it! It’s basic, it’s fast, it’s flexible—and it’s been showing up on our weekly meal plan without fail for over a month.

Wait—Why Is This Taco Meat So Life-Changing?
This taco meat is a flavor-filled protein base made with whole foods that you can transform into a million different dinners. Whether you’re feeding two or prepping for leftovers, it’s endlessly useful.
Here are my current favorite ways to serve it:
- Big Mac-style salad – Lettuce, tomato, shredded cheese, pickles, and special sauce.
- Classic tacos – Soft or crunchy shells, with all your favorite toppings.
- Greek lunch bowl – Add it (warm) to a Greek salad and stir in one of your thawed avocados for healthy fats. (I know it sounds unusual, but I love it!)
- Taco salad – Piled high with lettuce, cheese, tomatoes, and served with sourdough chips.
- Stuffed sweet potatoes – Slice open a baked sweet potato and load it with taco meat and toppings.
- Quesadillas – Spread taco meat and cheese between tortillas and grill until crispy.
- Freezer burritos – Roll it up with rice and beans, wrap in foil, and freeze for later.
- Tex Mex Burrito Bowls– Serve it over rice and add your favorite toppings like salsa and grated cheese.
You get the idea! It’s a cook-once, eat-many-times situation—and that’s exactly what I look for these days!
Make It Even Better
Want to make it healthier? You totally can! You can:
- Make your own taco seasoning using spices you probably already have (I still need to get around to that…)
- Use ground turkey instead of beef
- Load up the veggies in the pan—try zucchini or mushrooms. You can also add black beans or kidney beans if you want to make it go farther.
But honestly? Even the basic version is a win.
