Don’t feel like spending hours in the kitchen? Here are 8 super easy weeknight dinner ideas for two!

Cooking for two is an adjustment after you’ve cooked for an entire family for decades!

But, it’s not all bad…;)

Now that it’s just the 2 of us, dinner time looks a bit different. Not long ago, I wrote down my top tips for cooking for two.

We’re trying to have a healthy eating lifestyle, and if I can get it together, I love to have freezer meals prepared and in the freezer.

But, that’s not reality all the time.

I have some time saver “cheater tricks” for dinner ideas for two that just might shock you.

It’s not all homemade at our house!

Quick & Easy Weeknight Dinner Ideas for Two

Chicken & Cheese Fajitas

If I can muster up a little energy for chopping chicken, peppers, and onions, these Chicken & Pepper Fajitas are one of our favorite meals. They are super tasty and perfect served with just a simple side salad.

Spicy Lime Chicken Salad

This Spicy Lime Chicken salad is a scrumptious option for summer time. It just takes a few minutes to cook the chicken and assemble the salad.

Sloppy Joes or Sloppy Jims

I’ve been making sloppy joes using my Mom’s recipe since I was in high school. It’s one of my favorite – and quickest! – meal ideas. For a healthier version, I’ve started to make ground turkey sloppy joes, and they are DEEE-licious! They can be served traditionally on a bun, or over roasted large sweet potato.

Frozen Chicken Cordon Bleu

Yep, you read that right! We discovered some delicious ready made frozen cordon bleu. (Here’s a link to something similar.) We just throw it in the oven or air fryer to bake, along with a few sweet potatoes, and dinner is ready for us in about 30 minutes. Served with a side salad, it’s delicious! 

Lean Cuisine Meals

Another premade frozen option that works when we’re tired and need to eat! My favorite is Chicken Fettuccini  and my husband usually chooses something like Chicken Teriyaki. I like to toast an English muffin to have on the side, along with a spinach salad.

Drive through breakfast sandwiches for dinner

Have I mentioned that we used to live on an island (for 24 years) with no drive in restaurant options? Now we live in town and marvel at how easy it is to go through a drive through whenever we jolly well want!

Breakfast sandwiches for dinner aren’t high in calories, we think they’re delicious, and we just love the novel idea of being able to do it.

Our current favorite are Tim Horton’s breakfast wraps – on special most nights for 2 for $5 with their app.

We take ours to a parking lot and watch the ocean while we have dinner in the car. We call it “dining by the sea”.;)

Take out or frozen pizza

Frozen pizza is another super quick and easy dinner option. But, I’ll admit. I’m all frozen pizza-ed out! My husband mentioned it as an option for dinner tonight and the idea didn’t seem appealing. But, you know what did? Take out pizza…delivered right to our door!

Yep, refer to the drive through dinner paragraph. We just love the food options available in town. tee hee!:)

We don’t do take out pizza very often. Maybe once every 6 months? But, it’s a fun option every now and then.
