Sometimes ideas and conundrums collide to create the most delightful discoveries! This recipe is one of those happy accidents. Recently, I was listening to a podcast where a lady shared her tips for easy dinners. As someone who is honestly tired of cooking every single day (anyone else?), I was all ears.

Her secret? Keep dinners simple — ground beef or chicken — and turn dinner into some kind of “rice bowl.” She cooks a big batch of rice at the beginning of the week and uses it as the base for her dinners every night. Intriguing, right?

Then, just days later, we welcomed some special guests to our home. I wanted to make lovely dinners for them, but with tricky dietary needs to navigate, I wasn’t sure how to please everyone. Cooking for Two? Halve the ingredients, cook one chicken breast per person, and adjust toppings accordingly.

Freezing Ahead: Cook and freeze grilled chicken breasts and rice separately in freezer-safe containers. Thaw in the fridge overnight and reheat before serving. Keep fresh toppings ready to go in the fridge. Or, freeze chicken in marinade for easy day of prep!

Baking After Freezing: For a hot dinner, reheat chicken in a 350°F oven for about 15 minutes until warmed through, and warm rice in the microwave.

Ingredients

  • For the Mexican Chicken Marinade:
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • Black pepper to taste
  • 1 pound boneless skinless chicken breasts (or thighs)
  • For the Bowls:
  • 2 cups cooked rice
  • 2 ripe avocados, sliced
  • 2 cups shredded romaine lettuce or baby spinach
  • 1 cup salsa
  • 2 medium tomatoes, diced
  • 4 ears cooked corn on the cob, grilled and kernels removed
  • ½ medium red onion, finely diced
  • 1 cup shredded sharp cheddar cheese
  • 1 cup crushed nacho cheese Doritos
  • ½ cup chipotle ranch dressing (or mayo + lime juice + hot sauce)

Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, lemon juice, chili powder, garlic powder, oregano, paprika, salt, and black pepper.
  2. Marinate the chicken: Place chicken breasts in a resealable bag or shallow dish. Pour marinade over chicken, making sure each piece is well coated. Refrigerate and marinate for at least 30 minutes, or up to 4 hours for best flavor.
  3. Grill the chicken: Preheat grill or grill pan to medium-high heat. Grill chicken for about 6–7 minutes per side, or until cooked through (internal temperature 165°F). Remove from heat and let rest 5 minutes before slicing thinly.
  4. Cook the rice: Prepare rice according to your preferred method (baked rice is my favorite). Keep warm.
  5. Prepare toppings: Slice avocados, shred lettuce or spinach, dice tomatoes and red onion, and grate the cheese. Boil and grill corn if desired and slice off the kernals with a serated knife.
  6. Set up serving: Arrange cooked rice, grilled chicken, and all toppings in separate bowls or containers on a lazy Susan or serving area.
  7. Build your bowl: Let everyone create their own bowl, layering a bed of lettuce, rice, chicken, avocado, salsa, tomatoes, corn, onion, cheese, Doritos, and drizzle with chipotle ranch dressing.
