I can still picture my Grandma Bernice in her farmhouse kitchen. My favorite spot there was perched on the silver bar stool at the high counter right beside the stove. It swiveled back and forth, and I just loved sitting there, spinning gently while Grandma puttered around in the kitchen.

One of my favorite summer memories with Grandma was watching her make Harvard beets. She’d get out her trusty Revere Ware saucepan, pour in the “magic” ingredients, and stir from time to time. I loved that tangy-sweet vinegar smell filling the kitchen—it was one of my favorite side dishes she made.

When I recently decided to try my hand at cooking beets, I was disappointed to realize I didn’t have Grandma’s recipe. But my sister came to the rescue and sent it to me! As I cooked them at my own stovetop, that familiar smell instantly transported me back to my little-girl days, swiveling on the stool in Grandma’s kitchen.

Old Fashioned Harvard Beets

These old-fashioned Harvard beets are tangy, sweet, and taste just like my Grandma Bernice used to make in her farmhouse kitchen.

Ingredients

  • 6 tablespoons white sugar
  • 2 teaspoons cornstarch
  • 2 tablespoons plus 2 teaspoons white vinegar
  • 2 tablespoons plus 2 teaspoons water
  • 2 cups fresh cooked beets, diced (or one 15-ounce can beets, drained)
  • 1 ½ tablespoons butter
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper

Instructions

    1. In a medium saucepan, whisk together sugar, cornstarch, vinegar, and water until smooth.Bring the mixture to a boil over medium heat, whisking occasionally. Boil for 5 minutes. (It will get really thick.)
    2. Add the beets, reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
    3. Remove from heat. Stir in butter, salt, and pepper until the butter melts and the sauce is smooth.
    4. Serve warm or chilled.
