Easy Tortellini and Sausage Bake Casserole (Make-Ahead + Freezer Tips!)

With layers of cheese tortellini, Italian sausage, and marinara sauce, this Tortellini and Sausage Bake recipe is great for new parents, busy weeknights, or meal prepping – layer it up, bake it fresh, or freeze for later.

My son and his wife recently had their first baby (Yay! We love being grandparents!). They live about 5 hours away from us, so when we recently went to visit, I knew I wanted to bring the gift of some freezer meals to help them through these exhausting early days of new parenthood.

I started hunting for easy, hearty meals they’d enjoy, and landed on a variation of this Tortellini and Sausage Bake. My son has always loved anything with tortellini, and I thought it sounded like a comforting and simple meal to throw in the oven on a tired evening.

It turned out to be a super quick casserole to prep, and it freezes like a dream! I picked up some foil pans to make transport easy and doubled the batch so I could stash some in our freezer, too.

You can use fresh or frozen tortellini for this recipe. You’ll just need to adjust the baking time for frozen tortellini.

  • Cheese tortellini (I used fresh, but frozen works too)
  • Italian sausage, removed from casing & browned to cook through – Original or spicy italian sausage both work well for this recipe. Choose whichever is your favorite.
  • Finely chopped spinach (optional)
  • Shredded mozzarella cheese
  • Marinara or pasta sauce (about 3 cups)
  • Cooking spray (for the pan)
I made this recipe in my favorite 6 x 9 inch pans – dividing it into 2 pans to make 2 meals for the 2 of us!

Simple Instructions for Making Sausage & Tortellini Casserole

Once you have all your ingredients together, you simply layer them up as follows:

Bake until it is bubbly around the edges and the cheese is melted. Check on it to make sure it’s not getting dry, and if so, add a little water around the edges.

Tortellini and Sausage Bake Casserole

Enjoy the flavors of Italy with this super quick and easy layered tortellini and sausage bake casserole. Layer it up, bake it, and enjoy a freezer friendly dinner idea the whole family will absolutely love!

Ingredients

  • 3 cups marinana sauce
  • 375 grams fresh cheese tortellini
  • 2 cups spinach, finely chopped
  • 2 cups shredded mozzerella cheese
  • 1 pound Italian sausage, casings removed and browned until cooked through

Instructions

  1. Spray a 9x9 inch baking dish with non-stick cooking spray and spread a thin layer of marinara sauce to help prevent sticking.
  2. Layer in the ingredients in the following order:
  • half of the tortellini (try to make sure it is a single layer)
  • half of the spinach
  • half of the meat
  • half of the sauce
  • half of the cheese

3. Repeat the layers, ending with the cheese.

4. To bake right away, cover with foil and place in an oven that has been preheated to 375 degrees. If the tortellini is fresh, bake for 25 minutes covered, or until it is bubbly around the edges. Then, remove the cover and bake 10-15 minutes more or until the cheese is melted and it is golden brown. Check it during the baking time. If it is starting to look dry, pour a little water around the edges of the pan. (If using frozen tortellini, add 20 more minutes onto the first baking time (when it is covered in foil).)

To freeze ahead: Layer up all the ingredients and do not bake. Cover tightly and label and place in the freezer.

To Bake After Freezing: Thaw overnight in the fridge. Bake at 375 degrees covered with foil for 25 minutes, and then uncover and bake 10-15 more minutes.

    Helpful Tips When Making This Recipe

    • If you don’t like cooked spinach, skip it – or serve a spinach salad on the side.
    • No matter what size of pan you use, try to keep the tortellini layer in a single layer – not tortellini piled on top of each other.
    • Use fresh or frozen tortellini – either will work- you’ll just need to adjust the cooking time accordingly!
    • Spray your baking dish to help with cleanup and prevent sticking.
    • Shred your own mozzarella for better melt and flavor.
    • Make sure sausage is fully cooked before layering.

    For any baked pasta dishes like this one, peak in on it during the baking process. If it starts to look dry, pour a little water around the edges. And, when you are putting on the second half of the sauce, fill up the pasta sauce jar with about 1/3 cup of water, swish it around to both clean out the jar and add a little water into the sauce. It will help add moisture as it bakes!
