Classic no bake cookies – These no bake chocolate oatmeal cookies with peanut butter are quick and delicious!

These chocolate peanut butter no bake cookies were the first cookie recipe I ever made.

I remember standing in our farmhouse kitchen with my older sister on a Sunday afternoon stirring up a batch of these.

They don’t require any unusual ingredients and they only take a few minutes to make – literally!

How to Make Chocolate Peanut Butter No Bake Cookies

Ingredients you’ll need for this recipe:

  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 tsp. vanilla
  • 3 Tablespoons cocoa
  • 1/2 cup peanut butter
  • 3 cups quick oatmeal

Steps for making these classic no bake cookies

  1. In a saucepan, bring the sugar, butter, and milk to a rolling boil while stirring constantly.

  2. Boil for exactly 1 minute. (The boiling time is super important, here. If you boil it for too long, the cookies will crumble. If you don’t boil it enough, they will be sticky.)

  3. After the boiling time is up, add in the vanilla, cocoa, peanut butter, and oatmeal.

  4. Once stirred through, immediately drop the “dough” by the tablespoon full on a parchment or wax paper lined cookie sheet.

  5. Let cool before eating.

How to store no bake cookies

For best results, store these oatmeal chocolate no bake cookies in an airtight container with a lid or a resealable Ziploc bag. They will keep at room temperature or in the fridge for up to two weeks.

Why are my no bake cookies dry and crumbly?

The most common cause for crumbly, dry no bake cookies is that the mixture was boiled too long. Try to time it exactly for 1 minute, and use quick cooking oats instead of old fashioned oats.

Why are my no bake cookies gooey?

If your no bake cookies are sticky and gooey and they don’t seem to set up, the mixture probably hasn’t been boiled for quite long enough. Another factor to consider is the humidity and moisture in the air the day they are made may affect their overall texture as well.

A simple solution to sticky no bake cookies is to put them in the fridge to harden. Scooping up the soft cookie and eating it off the spoon seems to work fine for many people, too!;)
