Helpful Tips When Making This Recipe

  • For the juiciest chicken, let it marinate for at least 30 minutes (or overnight for deeper flavor).
  • If grilling, let the chicken rest for 5 minutes before slicing to keep it juicy.
  • Use fresh lemon juice for the best flavor—bottled juice won’t have the same brightness.

If you like to freeze marinades for easy make ahead meals, thaw the chicken marinade on the bottom shelf of the fridge overnight on a plate. You don’t want it accidentally dripping on your other food in the fridge!

Easy Lemon Chicken Marinade – A fresh, flavorful one-dish dinner! Bake or grill this juicy lemon herb chicken for a simple weeknight meal. Perfect for meal prep and freezer meals!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 2 Tablespoons plus 2 teaspoons lemon juice

Instructions

  1. Place chicken breasts in a ziptop bag. Mix together all other ingredients in a mixing bowl and pour over the chicken. Zip up the top and squeeze the marinade to cover the chicken well. It will seem like a small amount of marinade, but it works well!
  2. Let sit in the refrigerator for at least 30 minutes to let all the flavors soak in. The longer it can marinate, the more flavorful it will be. (Marinate for up to 24 hours.)
  3. Place chicken in a baking dish and place uncovered in a preheated oven at 400 degrees. Bake for 15-20 minutes and flip over. Bake for another 15-20 minutes.
  4. Serve with your favorite side.
