Easy Lemon Chicken Marinade – A fresh, flavorful one-dish dinner! Bake or grill this juicy lemon herb chicken for a simple weeknight meal. Perfect for meal prep and freezer meals!
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/8 teaspoon garlic powder
- 2 Tablespoons plus 2 teaspoons lemon juice
Instructions
- Place chicken breasts in a ziptop bag. Mix together all other ingredients in a mixing bowl and pour over the chicken. Zip up the top and squeeze the marinade to cover the chicken well. It will seem like a small amount of marinade, but it works well!
- Let sit in the refrigerator for at least 30 minutes to let all the flavors soak in. The longer it can marinate, the more flavorful it will be. (Marinate for up to 24 hours.)
- Place chicken in a baking dish and place uncovered in a preheated oven at 400 degrees. Bake for 15-20 minutes and flip over. Bake for another 15-20 minutes.
- Serve with your favorite side.
