Cheeseburger Casserole with Homemade Biscuit Topping Recipe

With easy ingredients like ground beef, cheese, ketchup, and biscuit topping, this cheeseburger casserole is an easy weeknight dinner the whole family will love!

The other night, I was scrambling to fix something quick for supper. The family was about to arrive home and I knew they would be hungry! From the deep recesses of my memory came this recipe my mom created when I was little. It was a favorite of mine ~ and turns out, is a favorite of my family as well!  It’s the perfect comfort food recipe for a cool, rainy day.

Here’s how to make Cheeseburger Casserole with Easy Homemade Biscuit Topping Recipe:

Ingredients:

  • 1 1/2 pounds ground beef
  • Approximately 1 cup ketchup
  • 1 1/2 cups grated cheddar cheese
  • 3 cups flour
  • 1 1/2 tablespoons baking powder
  • 3 teaspoons sugar
  • 3/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 3/4 cup butter
  • 1 cup milk

Step by Step Instructions for Cheeseburger Casserole

  1. Brown 1 1/2 pounds hamburger, seasoning with salt and pepper.  Once cooked through, drain off fat and spoon into the bottom of a 9 x 13 inch pan.  Squirt on a liberal amount of ketchup.

  1. Sprinkle on the grated cheese. (I’m sure any kind would do. We just happened to have cheddar.)

  1. Mix up the homemade biscuit dough. To make the homemade biscuits, stir together flour, baking powder, sugar, baking soda, and salt. Cut in the butter till mixture resembles course crumbs. Make a well in the center; add milk all at once. Stir just till dough clings together.
  2. On a lightly floured surface, knead dough gently for 10-12 strokes. Roll to 1/2 inch thickness the same size as the 9 x 13 inch pan.

  1. Gently fold the sheet of biscuit dough in half, lift it up and place it on top of the cheeseburger casserole and unfold until it fits the whole casserole dish.

  1. Bake at 375 degrees until the biscuits are golden brown and cooked through – about 30 minutes.

  1. Cut into serving sizes. If you want, you can flip them upside-down so the biscuit is on the bottom – making them “upsidedown cheeseburgers”.

  3. Hi Rita! Hope you are continuing to feel better every day. Had three surgeries myself this year and although I breezed through them pretty much, I was bagged for quite awhile. But then, presto magic, I just felt better and this has continued. I think being in the hospital right now especially not having anyone with you, is pretty traumatic. With NO warning, I found myself in the CR Hospital for 7 days then was transferred to Nanaimo by ambulance for a pacemaker surgery. 24 hours later, they walked me out and there were Linda and Dan. I sure was glad to see them after nearly 10 days! We went straight to McDonalds for some salt and grease!😂🤪 I still feel blessed to have been cared for so well in both hospitals. I also felt very calm the whole time because of visits from my best friends God and Jesus. Blessings to you and Irwin. Spring is here and soon, this pandemic will be in the rear view mirror. I am so proud of the Riverites, the BC’ers and all of Canada!
