How to Portion, Cook, and Freeze This Recipe to Fit Your Lifestyle
This recipe is wonderfully flexible. Whether you’re cooking for a family, prepping ahead, or cooking for two, here are some different options you can choose from to make it work for you:
Cooking for Two? Prepare the full batch and portion it into meal-sized servings. Once cooled, freeze it flat in zip-top bags or containers for easy storage.
Feeding a Family? Double the batch (it will make a LOT!) and freeze extras for quick and easy future meals.
Freezing Ahead? Allow the soup to cool completely before portioning it into meal-sized freezer containers or bags. Lay them flat to save space in the freezer.
Heating After Freezing? Just reheat on the stovetop or in the microwave when ready to enjoy. Or, put it in the crockpot on low to heat up slowly throughout the day.

Simple Instructions for Hamburger Rice Soup
(For all the detailed instructions, refer to the printable recipe card at the bottom of this post.)

2. Add the rest of the ingredients and simmer about 60 minutes.
3. It’s ready to serve when the rice is cooked and veggies are soft.
Helpful Tips When Making This Recipe
- For a thicker soup, let it simmer longer to allow the rice to absorb more liquid. Likewise, if you’d like it thinner, add more water.
- If freezing, slightly undercook the rice so it doesn’t get mushy when reheated. Or, you can freeze the soup without the rice and add the rice in when reheating it.
- Stir in a splash of broth or water when reheating to adjust consistency.
- Try adding potatoes or swapping out the red pepper for a variation.

Substitutions and Variations for this Hamburger Soup Recipe
- Swap ground beef for ground turkey or chicken.
- Use brown rice instead of white rice for a whole-grain option.
- Add diced potatoes instead of bell peppers for a classic touch.
- Make it spicier with a pinch of red pepper flakes.
