Hamburger Barley Soup
As I mentioned in a recent Facebook live video, I’m working on developing healthier habits in the area of eating this year. We’re only 9 days into the new year, and so far, so good!;) I discovered this Hamburger Barley Soup recipe recently, and it fits right into my new habit goals. It’s healthy and filling ~ and bonus!, it requires only a few ingredients.
Here’s how to make it.
Step One: Brown 1 1/2 pounds ground beef with 1/2 cup onion and 1 clove minced garlic. Drain off fat and put into slow cooker.
Step 2: Dice 3-4 medium carrots and 3 stalks celery.
Step 3: Layer carrots and celery on top of cooked hamburger mixture.
Step 4: Add 1- 28 oz can diced tomatoes,2/3 cup pearl or pot barley, and **4 packages oxo beef broth powder that has been mixed with 6 cups boiling water. (**Or, if you can’t find the beef broth powder, use 4 cups beef broth and 2 cups water.)
Step 5: Salt and pepper to taste and add one bay leaf. Cover crock pot and cook on high for 1 hour and on low for 5-6 hours.
