These easy smashed potatoes are a crispy, flavorful side dish that’s a fun “mash up” of classic boiled and baked potatoes —great for weeknights or gatherings!

If you’re new here, you might know me as Grandma Rita in my wee little townhouse kitchen, cooking for my handsome hubby and I. But what you might not know is that not that long ago, I spent 2 years as the head chef and food services manager at a year-round camp and conference center, cooking for up to 250 people at a time!
One of my favorite parts of that job was discovering new recipes that scaled beautifully from small gatherings to large groups. That’s how I first met Smashed Potatoes. Somewhere between a baked potato, mashed potato, and a roasted potato—these little guys became an instant hit with the campers, especially when served alongside meatloaf (which, by the way, is also a blog favorite!).
Now that I’m back to cooking for two, I still love making these. They’re simple, cozy, and just the right mix of crispy and creamy. Here’s how you can make them at home!

You really only need a few basic ingredients for this recipe – baby potatoes, oil, and spices!
Here’s some specifics for serving 4 people:
- about 3–4 baby potatoes per person – red, yellow, or mixed works great
- 2 tablespoons olive oil – You don’t need to measure exactly here. You’re just going to drizzle it over!
- Salt & pepper, to taste
- Optional spices:
- Garlic powder + dried rosemary
- Smoked paprika + sea salt
- Italian seasoning + Parmesan cheese
- Everything Bagel seasoning
- Cajun spice blend
- Lemon pepper

1.Cover potatoes with water and boil just until they are tender when poked with a fork. 2. Drain and transfer cooked potatoes to baking pan. 3.Smash potatoes with a potao masher, drizzle with olive oil and spices. 4. Bake at 400 degrees until crispy & golden brown.
Helpful Tips When Making This Recipe
- Don’t worry about them looking “messy” when you smash them. The fluffy parts that stick up are the parts that turn golden brown and crispy!
- I love to cooke these on stoneware pans, but you can use parchment lined baking sheets for easy cleanup, too.
- If you have leftovers, these smashed potatoes reheat in the air fryer really nicely.

- Swap olive oil for melted butter or bacon fat for a richer flavor.
- Use Yukon golds or fingerling potatoes instead of baby potatoes.
- Top with shredded cheddar and chives for a loaded version.

How to Portion, Cook, and Freeze This Recipe to Fit Your Lifestyle
If you like to meal prep like I do, here are some ways you can alter this recipe for meal prepping and also adjusting it for two people.
- Making for Two People: Use about ½ to ¾ lb of baby potatoes (roughly 6–8 potatoes), and adjust seasoning to taste.
- To Freeze Ahead: Boil, smash, season, and stop before the final bake. Flash freeze the potatoes on a tray, then transfer to a freezer-safe bag. Bake from frozen at 425°F until hot and crispy (15–20 minutes), or pop in the air fryer at 400°F for 8–10 minutes.
- To Bake After Freezing: No need to thaw. Just bake or air fry directly from frozen as noted above.

Smashed Potatoes
Baby potatoes boiled and baked to perfection with spices to make a crispy & tasty side dish -perfect for meatloaf, steak, and any other meal that pairs well with potatoes.
Ingredients
- 8-10 baby potatoes
- olive oil
- spices of choice (like italian seasoning, chili powder, or rosemary)
- salt and pepper to taste
Instructions
- Scrub baby potatoes under running water until clean.
- Place potatoes in a large pot and cover with water. Sprinkle in salt. Boil until fork tender - about 10-15 minutes depending on size of potatoes.
- Drain potatoes and pour out onto a flat surface (like a large cutting board). Using a potatoe masher, smash each potatoe. It's ok if they look messy. The messier the better!
- Brush each one with olive oil and sprinkle with spices of your choice. Some favorite options are Italian seasoning, chili powder, rosemary, or sage,
- Bake in a preheated 400 degree oven for 10 minutes, or until crispy and brown around the edges
