I just love cooking in our trusty cast iron pan. I found it a learning curve at first, but now I use it nearly every day! Here are a few tips for cooking this recipe in a cast iron pan.
- Preheat Properly: Add a drizzle of olive oil and let the pan heat up before adding chicken. The meat should sizzle when it touches the surface.
- Don’t Rush the Sear: Once the chicken is placed in a single layer in the pan, avoid moving it until you see the edges turn white. This ensures a good sear and prevents sticking.
- Use Veggies to Deglaze: When the pan looks dry after browning the chicken, add the onions and peppers. Their moisture will lift flavorful bits off the bottom. Use a flipper to scrape off the flavorful bits as it cooks.
- Keep Moisture Levels in Check: Once the broth and Rotel are added, use a flipper to scrape up anything that may have stuck to the bottom of the pan (it’s the yummy bits!), then simmer on low with the lid on, stirring occasionally to prevent sticking.

Ingredients
- 2 skinless boneless chicken breasts, diced in 1 inch chunks
- 1 tablespoon cajun seasoning
- 1 medium onion, diced
- 1 red pepper, diced
- 2 1/4 cups dried penne pasta
- 2 cups chicken broth
- 1 can original Rotel (with juice)
- 1/2 cup milk or heavy cream
Instructions
- Season the Chicken: Toss chicken pieces in Cajun seasoning.
- Brown the Chicken: Heat a skillet (preferably cast iron) with a little oil. Add the chicken and let it cook undisturbed until the edges turn white, then flip and cook through.
- Sauté the Veggies: Stir in the diced onion and red pepper, allowing their moisture to help deglaze the pan.
- Add the Pasta & Liquids: Stir in the dried pasta, chicken broth, and Rotel. Bring to a boil.
- Simmer: Reduce heat, cover, and let simmer for 10 minutes, stirring occasionally, until the pasta is al dente.
- Finish with Creaminess: Stir in the milk or cream for a rich texture.
- Serve & Enjoy: Sprinkle with grated Parmesan or mozzarella if desired.
Notes
I used 2 percent milk at the end and it was still thick and creamy. But, for extra creaminess, you can use heavy cream.
For a slightly different flavor, instead of cajun seasoning, use 1 tablespoon southwest seasoning pluse 1/8 teaspoon cayenne pepper (if you like spicy food!).
