This Baked Feta Chicken Pasta is a simple, flavorful one-pan meal inspired by the viral TikTok recipe—now with added protein! Juicy chicken, creamy feta cheese, and sweet roasted cherry tomatoes bake together to create a rich, tangy sauce that coats every bite of pasta. Seasoned with garlic, Cajun spice, basil, and oregano, this dish is packed with bold flavors and comes together with minimal effort. It’s a perfect weeknight dinner for two, but you can easily double the recipe to serve a family. Serve with a crisp salad and garlic bread for a delicious, well-rounded meal!
Ingredients
- 1 1/2 skinless, boneless chicken breasts, diced into 1 1/2 inch cubes
- 5.4 ounces feta cheese
- 3 garlic cloves cut into small pieces (or minced)
- 1 teaspoon cajun spice
- 1/2 pint cherry tomatoes
- 2 tablespoons olive oil
- 1/2 teaspoon basil
- 1/2 teaspoon oregeno
- 1/4 teaspoon onion powder
- salt and pepper to taste
- 2 cups dried penne rigate pasta
- 1/2 cup freshely grated parmesan cheese
Instructions
- In a 6.5 x 10 inch baking pan, place the feta cheese block in the center of the pan. Sprinkle the diced chicken around it and sprinkle the cajun spice on it. Add the garlic clove chunks.
- Sprinkle the cherry tomatoes around the feta cheese and drizzle the pan of ingredients with olive oil. Sprinkle the spices over the top of everything one by one (or you can mix them together in a small dish first if you so choose).
- Bake in a preheated oven at 400 degrees for 40 minutes or until the tomatoes are blistered and cracking.
- While the feta sauce is baking cook 2 cups of dried pasta according to package directions and drain.
- Stir the feta sauce after it's finished baking and stir in the cooked pasta. If the pasta sauce seems too thick, thin it down with some of the pasta water. Sprinkle with parmesan cheese and put back into the oven until melted. (Just a few minutes.)
