Creamy Smoked Sausage and Noodles Skillet Meal Recipe

I married into a family with a Mennonite heritage, and this was one of my Mother-in-Law’s famous recipes. It always brings back great memories as I smell it cooking. She never used a recipe and took liberties to alter it any way she wished – and it was always a treat to eat!

Ingredients for Mom’s Sausage and Noodles

  • 1 pound smoked farmers sausage, uncooked – If you can find “Mennonite style” sausage, that is our favorite.
  • 2 cups dried pasta noodles – any kind will do
  • 1 medium onion, diced
  • 1 cup cream – heavy cream is preferred, but half and half works, too.

How to make skillet sausage and noodles

  1. Put a large pot of water on a burner over high heat and add a teaspoon of salt. Cover and bring it to a boil in preparation for cooking the pasta noodles.
  2. While the water is heating up, prep the ingredients by cutting the sausage into 1/2 inch slices and dicing the onions.
  3. When the water boils, pour the dried pasta into it and set the timer according to the package directions of the type of pasta you are using. Place a strainer in the sink in preparation for draining it.

  1. Heat a cast iron skillet over medium heat and melt 2 tablespoons butter. When the butter has melted and the pan is hot, add in the sliced smoked sausage. Cook until it is browned on both sides – about 4 minutes per side.

  1. Remove the sausage from the pan and add the diced onions to the hot pan. Saute, stirring constantly until they are transluscent in color and soft when pierced with a fork. If the cast iron skillet is getting dry before the onions are done cooking, add a bit of water and butter – scraping up the tasty bits in the bottom of the pan while they cook.
  1. Once the pasta is cooked, drain the boiling water off and set it aside.

  1. Add the cream to the sauted onions and stir until hot and bubbly.
  2. Return the sausage back to the pan with the creamy onion gravy and stir the cooked noodles in.

What do you serve with Farmers Sausage and Noodles?

My mother in law almost always had fresh homemade dinner buns on hand, and she served them along side this meal with butter. If we don’t have fresh buns, any bread will do!;) (Here is my mother-in-laws bun recipe if you’d like it…)

Any vegetable goes well with this sausage and noodles dish, and lettuce salad is an easy and delicious side, too.

What kind of sausage is best for this sausage and noodles recipe

Because of their Mennonite heritage, Mom always preferred mennonite sausage for this recipe. If we can find it, that’s what we get, too. We look for names like “mennonite sausage” or “farmers sausage” on the package.

This particular brand we found at our local Walmart food section and it was very delicious and reminded us of the classic Mennonite sausage Mom used.
