This recipe makes a lovely 9×13 sized baking pan full – perfect for a family or even if you’re hosting guests.

  • For Two People: Cut the recipe in half and bake in an 8 x 8 inch pan (and you’ll probably have a few leftovers for the next day).
  • To Freeze Ahead: I haven’t tested this as a freeze ahead meal, but because of the fresh spinach and tomatoes, I wouldn’t recommend freezing it before baking. Freezing the leftovers to be heated at a later date would work fine, though.
  • To Reheat After Freezing: Since you are freezing it already fully baked, it can simply be thawed in the fridge and reheated in the microwave.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 pound skinless, boneless chicken breasts, diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon basil
  • 4 cloves fresh garlic, minced
  • 2 cups cherry tomatoes
  • 1/2 cup sundried tomatoes, roughly chopped
  • 3 cups fresh spinach
  • 1 1/2 cup dried orzo
  • 1/2 cup heavy cream
  • 3 cups chicken stock
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat oven to 400 degrees and spray a 9 x 13 inch baking pan with non-stick spray.
  2. Place the diced chicken in the bottom of the baking pan and mix in the olive oil and spices until the chicken is coated well.
  3. Layer on the minced garlic, cherry tomatoes, and sun-dried tomatoes.
  4. Add the spinach and dried orgo to the cherry tomatoe layer.
  5. Pour over the chicken stock and cream. Stir to combine everything together.
  6. Bake at 400 degrees for 35-40 minutes or until the orzo is soft and the chicken is cooked through. Sprinkle on the parmesan cheese and bake for 5 more minutes, or until the parmesan is melted.

Notes

If you find the casserole is dryer than you'd like, stir in some more cream before adding the parmesan cheese.
