(A printable recipe card is provided at the bottom of this post for your convenience.)

  • Powdered sugar: sweetens the filling and helps it firm up enough to roll.
  • Sweetened condensed milk: the secret to the creamy, moist centre. Be sure to use sweetened condensed milk, not evaporated milk.
  • Vanilla: a little splash brings out the coconut flavour.
  • Coconut: fine or medium shredded coconut works best because it holds together nicely when you roll the balls.
  • Semi-sweet chocolate chips: for dipping or drizzling on top.
  • Vegetable oil: just a bit melted with the chocolate makes it smooth and easy to drizzle.

**Please note that this amount of chocolate chips would be enough to dip quite a few coconut balls. If you just want to drizzle the chocolate on the top, you won’t need to make this much dipping chocolate.

Step by step instructions for easy coconut balls

1. Mix the filling. Stir the powdered sugar, condensed milk, coconut and vanilla together in a big bowl until it’s all combined.

2. Chill it. Cover the bowl and pop it in the fridge for about an hour. The mixture is too soft to roll until it firms up.

3. Roll into balls. Scoop out small spoonfuls, roll them between your palms and set them on a lined pan. Chill them again so they’re nice and firm for the chocolate.

If dipping in chocolate isn’t your thing (like me!!), just drizzle the melted chocolate on the tops.
Tips
  • Chocolate chips do not make the most ideal dipping chocolate! I found that it left too thick of a covering on the coconut balls. If you want to have chocolate covered coconut balls, I recommend you use your own personal favorite dipping chocolate method.
  • Drizzling chocolate worked well with this melted chocolate and makes a pretty presentation. However, be sure to keep the coconut balls chilled until ready to use, as they get quite soft at room temperature.
  • Sprinkling coconut on immediately after dipping in the chocolate makes a pretty topping. White sprinkles would also be pretty.

Frequently asked questions

Why are my coconut balls too soft to roll?
Chill the mixture a little longer. If it’s still too sticky, stir in a bit more powdered sugar or coconut until it’s easy to handle.

Can I make coconut balls ahead of time?
Yes! They keep in the fridge for up to 2 weeks and in the freezer for up to 2 months, so they’re perfect for making ahead for holiday platters.

What kind of coconut should I use?
Fine or medium shredded coconut works best. Long flaked coconut makes the balls harder to roll and shape.
