Broccoli Chicken Alfredo Casserole is an easy weeknight dinner packed with flavor! This creamy casserole comes together quickly and can be prepped ahead for busy nights.

I’ve been looking for recipes that are freeze ahead friendly and also easy to scale for cooking for two people. This one was a new one to me, and it turned out so well! It uses just a few ingredients and is delicious either baked the same night as it’s assembled, or you can freeze it to bake on another day. You can use rotisserie cooked chicken and frozen broccoli if you need some convenient helpers for this quick recipe!

  • Cooked chicken (I used my handy Dutch Oven Chicken, but rotisserie or leftover would work well, too)
  • Fresh broccoli – blanched for just a few minutes and rinsed in cold water to stop cooking
  • Jarred Alfredo Sauce – Use your favorite kind. I used Classico.
  • Milk – I used 2 percent, but any kind will do.
  • Grated parmesan cheese.

This recipe is easy to make larger or smaller, to help fit whatever size of group you’re cooking for. Here are some different options you can choose from to make it work for you and your lifestyle:

  • Making for Two People: Halve all ingredients and assemble in 2- 5 cup casserole dishes.
  • Freezing Ahead: Assemble the casserole but don’t bake it. Cover tightly with foil and freeze for up to 3 months.
  • Baking After Freezing: Thaw overnight in the fridge and bake at 375°F for 30-35 minutes, or bake from frozen at 350°F for 45-50 minutes, covered with foil.

Helpful Tips When Making This Recipe

  • Use Pre-Cooked Chicken & Jarred Alfredo sauce for convenient time saving ingredients for this recipe. I like to use the Dutch Oven Chicken recipe when I’m doing batch cooking for the freezer. It is so quick and easy to bake and use for recipes like this.
  • Stir the layers together to make sure the chicken and broccoli are all covered well with the sauce. Then sprinkle the cheese on last.
  • Blanch the fresh broccoli before putting into the casserole. To do this, place the fresh, trimmed broccoli in a pot of boiling salted water. Cook it just until it turns dark green (just a few minutes). Immediately drain it and rinse it with cold water to stop it from cooking any longer. You don’t want it to turn mushy!

Grandma Rita’s Kitchen Tips

Thinning the sauce down makes it go a bit further in this recipe, and it still ends up being wonderfully creamy. Make sure there is enough sauce to cover all the ingredient well. Add a little more milk or cream if it looks too sparse.

Broccoli Chicken Alfredo Casserole

With layers of broccoli and chicken this Broccoli Chicken Alfredo Casserole is an easy weeknight dinner packed with flavor! This creamy casserole comes together quickly and can be prepped ahead for busy nights.

Ingredients

  • 2 large skinless, boneless chicken breasts, cooked and diced
  • 2 1/2 cups broccoli crowns
  • 3/4 cup alfredo sauce
  • 1/4 cup milk
  • 1/2 cup grated parmesan cheese

Instructions

  1. Blanch the broccoli crowns in boiling water by cooking them just until they are bright green. Drain and immediately rinse under cold water to stop them from cooking further.
  2. Place cooked and diced chicken in the bottom of an 8 or 9 inch square pan and layer on the blanched brocolli.
  3. Stir the alfredo sauce and milk together and pour over the top of the chicken and broccoli. Stir all the ingredients together in the pan and top with grated cheese.
  4. Bake uncovered at 375 degrees for 25-30 minutes or until the sauce is bubbling and the cheese browned.

Notes

The sauce will thicken slightly as it cools.

To freeze ahead, assemble the casserole before baking, cover tightly and freeze. Thaw overnight in the fridge and bake according to directions.
