I discovered these yummy Almond Butter Chocolate Cups while doing a healthy eating program. (Can you believe it??) Although I’m not currently on a specific “diet,” I’ve been working to make more intentional and nutritious food choices and eating mainly whole foods. That’s when I first learned about the term “fat bomb.” A little research told me it’s simply a high-fat, low-carb snack designed to boost energy and reduce cravings—especially handy for people like me who are trying to cut back on their sugar intake.

What I love most about these little treats is how satisfying & absolutely tasty they are. With no refined sugar and simple, whole ingredients, they feel like a decadent little treat! Best of all, they take only a few minutes to make and can be stored in the freezer—ready for whenever I need a little pick-me-up to go with a cup of coffee!

The base of these almond butter chocolate cups is melting together almond butter, coconut oil, & butter. The other ingredients are simply stirred in.

These Almond Butter Chocolate Cups are the perfect balance of sweet and satisfying—with no refined sugar and plenty of rich, wholesome flavor.

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons coconut oil
  • 4 tablespoons almond butter
  • 2 teaspoons dark cocoa powder
  • 3 teaspoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened coconut flakes
  • 2 tablespoons chopped almonds
  • Sea salt or slivered almonds for topping (optional)

Instructions

  • In a microwave-safe bowl, melt the butter, coconut oil, and almond butter together (about 30–45 seconds).
  • Stir until smooth, then mix in the dark cocoa powder, maple syrup, vanilla, coconut flakes, and chopped almonds.
  • Using a small cookie scoop, portion the mixture into mini silicone muffin cups arranged on a cookie sheet.
  • Sprinkle the tops with sea salt or slivered almonds, if desired.
  • Place the tray in the freezer and freeze until solid (about 1 hour).
  • Once frozen, remove the cups from the molds and store in an airtight container in the freezer.
