An Easy Old Fashioned Drop Dumpling Recipe Perfect for Soups

Today’s drop dumpling recipe comes straight out of Grandma’s recipe box. Many of you are like me and love the good old fashioned recipes and this is one of them!
Drop dumplings taste similar to biscuits, but melt in your mouth a little more. They are light, fluffy, and tender.
Some people have told me that they use canned biscuits to put on the top of soups & stews – which is a great idea. But, if you don’t happen to have them on hand, these just take a few minutes to mix up with common ingredients, and taste amazing!
I particularly like these on top of potato soup.
I grew up with Potato Soup as a hot, comfort food on cold Winter nights. And dumplings on the top makes it extra special.
While your soup or stew starts to simmer, mix together this easy dumpling recipe.

This easy dumpling recipe comes together with just a few pantry staples. (Exact measurements are in the printable recipe card below.)
- Flour
- Baking powder
- Salt
- Sugar
- Egg
- Milk
Easy Homemade Drop Dumplings Recipe
Top off your favorite soup or stew with a batch of these easy homemade drop dumplings. With just a few simple ingredients, it stirs together quickly and makes an easy one pot dinner idea!
Ingredients
- 1 cup flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon sugar
- 1 egg
- ½ cup milk
Instructions
- Mix together flour, baking powder, salt and sugar.
- Beat egg & milk together.
- Add liquid to dry ingredients and mix just until moistened.
- Drop dumplings onto the top of your hot, simmering soup one large tablespoon at a time. Don't worry if they look small. They will puff up!
- Make sure the soup is turned down to a low simmer and put the lid on.
- Check back in about 20 minutes and they should be puffed up and cooked through.

How to make Drop Dumplings for Soup:
- While your soup or stew simmers away, stir the flour, baking powder, salt, and sugar together in a large mixing bowl. In a separate bowl, whisk the egg and milk together, then pour that right into your dry ingredients, stirring just until moistened — a few lumps are perfectly fine, and overmixing is the one thing to avoid.
- Once your soup is hot and simmering, use your finger or a spoon to drop generous, heaping tablespoons of dough right on top — a few around the edges, a few in the middle. Don’t worry if the dough looks a little strange floating there at first; it puffs up beautifully as it steams! Turn the heat down to low, cover the pot, and let the dumplings cook for about 20 minutes, until they’re puffed up and spring back when you gently poke the top.
- Serve your soup steaming hot with dumplings piled on top — pure comfort food, and one of my favorite ways to dress up a bowl of potato soup on a cold night.




5. Use your finger or a spatula to drop the dumpling dough around the edge of the soup pot and then in the middle.


You’ll know they are done when they are puffed up and bounce back when you gently poke the top with your finger.
Serve soup in bowls with dumplings on the top.

Not sure what happened but I followed the recipe, adding extra flour because it was too gloppy. After a few minutes I checked on them and it looked like they all merged into one giant dumpling! I guess next time I will add even more flour?
