Hearty and full of flavor, this hamburger barley soup is a filling dinner idea for chilly days. And, bonus, it can be made in the crock pot so it can simmer and be ready for dinner after a busy day!

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup onion, diced
  • 1 clove garlic, minced
  • 3 medium carrots, diced
  • 3 celery stalks, diced
  • 1-28 ounce can diced tomatoes
  • 2/3 cup pearl or pot barley
  • 4 packages oxo beef boullion powder mixed with 6 cups boiling water
  • 1 bay leaf

Instructions

    Step One: Brown 1 1/2 pounds ground beef with 1/2 cup onion and 1 clove minced garlic. Drain off fat and put into slow cooker.

    Step 2: Dice 3-4 medium carrots and 3 stalks celery.

    Step 3: Layer carrots and celery on top of cooked hamburger mixture.

    Step 4: Add 1- 28 oz can diced tomatoes,2/3 cup pearl or pot barley, and **4 packages oxo beef broth powder that has been mixed with 6 cups boiling water. (**Or, if you can’t find the beef broth powder, use 4 cups beef broth and 2 cups water.)

    Step 5: Salt and pepper to taste and add one bay leaf. Cover crock pot and cook on high for 1 hour and on low for 5-6 hours.
