The Best Party Potluck Dessert
It seems this time of year we’re often asked to potluck parties (or bake sales, or “bring a treat” events). I always struggle with knowing what to bring. (Am I the only one?)
The other day, I stumbled upon Anna Olson’s cooking show on the Food Network, and watched her put together a Pumpkin Chocolate Bundt Cake with Butterscotch Glaze. She made it look quite easy, and the fact that no electric mixer was required appealed to me!:)
So, I gave it a whirl and served it at our little holiday party the other night.
It’s always a bit nerve wracking to serve something you’ve never tasted before, but now that I have, I’ll be making it again.
Anna mentioned that it freezes really well, so I made it a few days prior to the party. As soon as it cooled completely, I covered it and popped it into the freezer. The morning of the event, I pulled it out and iced it after it was mostly thawed.
As someone with a very active sweet tooth, my favorite part is the icing! But, the cake is moist and tasty, too.
You can find the complete recipe here. It seems to be quite forgiving, too. Rather than pumpkin puree, I used pumpkin pie filling (an “oops” buy at the grocery store). I didn’t know how that would affect the overall texture and flavour, but it seemed fine.
Now, please teach me. What do you take to party potlucks?
