Easy Strawberry Sauce Recipe for Desserts and More

Why You’re Going to LOVE this Strawberry Sauce Recipe

I hate to be bias, but I think strawberries are my favorite fruit. They’re naturally juicy and sweet – and I just think they are happy little things.:) When we were perusing the produce aisle a few days ago, I was ecstatic to see that it must be peak strawberry season. The strawberries are big & bright, and the price is lower than I’ve seen it all year. Yay!!

So, I decided I wanted to take home a basket of beauties and try to figure out a way to make strawberry sauce to freeze and use all Summer long.

I had some specific requirements, though. I wanted this strawberry sauce to be more “saucy” than thick like jam, so I could use it as a topping for desserts or ice cream. I also wanted to use something without refined sugar to sweeten it with – because we’re trying to cut back on that in our diet.

This sauce isn’t overly sweet, but you can customize the sweetness and add more honey if you want to sweeten it up more than it is. The lemon juice adds a bit of brightness to the flavor, and also helps keep the strawberries a pretty bright red color after it cooks.

I packaged up this sauce recipe into little mason jars to pop in the freezer so I can use it in the future when guests come over. I have a new recipe I’ll be sharing soon that uses this as a topping, and it turns out amazing!!

This strawberry sauce recipe uses honey instead of sugar. And, although cornstarch and water can be added and is pictured above, they are optional ingredients if you want a thicker sauce.

Ingredients for Quick & Easy Strawberry Sauce

  • I pound fresh strawberries. I use a kitchen scale to measure these, but it you don’t have a kitchen scale, 1 pound of strawberries is approximately equal to 3 3/4 cups whole strawberries.
  • The juice of half a lemon. (or 1 tablespoon lemon juice)
  • 3 tablespoons honey (or more if you want a sweeter sauce
  • Optional cornstarch slurry if you want a thicker sauce – 1 tablespoon cornstarch and 3 tablespoons water. (I did not use that for this sauce or in these pictures.)

Stir the sauce while it is cooking to prevent it from sticking and scorching on the bottom of the pan.

Step by Step Instructions for Strawberry Sauce

  1. Wash strawberries well in a colendar. Cut off the green tops and slice the strawberries into large bite- sized pieces. Smaller strawberries I just cut into four pieces and large strawberries I cut into 6 pieces.
  2. Place the strawberries, lemon juice, and honey in a medium sized saucepan. Turn the heat up to medium high and heat while stirring constantly. Continue heating and stirring until the strawberries release their juice and they become soft and hot – about 8-10 minutes.

I found that I stopped at that simple point. The sauce was just the consistency I wanted. I wanted this sauce to be a similar consistency to fresh strawberries that had been sliced and covered with sugar so the juice ran out, rather than a thick “jam-like” sauce.

However, if you find your strawberry sauce is too thin, you can make a cornstarch slurry by mixing together 1 tablespoon cornstarch with 3 tablespoons water and mix together until smooth. Then pour the slurry into the hot strawberries and continue stirring and cooking until the mixture thickens and gets shiny in color – probably about 3 more minutes.

How to store Strawberry Sauce

If you are going to use the strawberry sauce in the near future, cool completely, and pour the sauce into a container and cover with plastic wrap or a lid and place in the refrigerator. I removed the sauce from the refrigerator and set it on the counter a few hours before I was going to serve dessert for guests, and it was the perfect temperature and consistency for serving.

If you find it is too thick, you can microwave it for a few seconds to soften up the sauce again, making it easier to pour.

How to freeze Strawberry Sauce

  1. Once the sauce has cooled completely, pour into freezer friendly containers and seal well.
  2. If you are using jars for freezing your strawberry sauce, make sure you leave 1/2 inch of space free at the top of the jar to allow for expansion of the sauce as it freezes.
  3. Strawberry sauce will keep in the freezer for 3-6 months.

Uses for Strawberry Sauce

  • Pour it over your favorite vanilla cake as an alternative to frosting.
  • Add it to the breakfast or brunch table alongside pancake syrup for a topping for waffles, pancakes, or crepes.
  • Use it in your favorite smoothie recipe.
  • Top a bowl of greek yogurt with it and add some chia seeds and almond butter for a healthy snack.
  • Use it as a fancy topping for desserts like cheesecake, pavlova, or pana cotta.
