The BEST Soft & Fudgy Sourdough Discard Brownies
Do you have extra sourdough starter in your fridge and not sure what to do with it? This soft and chewy sourdough chocolate brownie recipe is a perfect way to transform that discard into something spectacular & yummy! If you’re looking to branch out from classic sourdough bread, these brownies offer a new way to enjoy the tangy benefits of sourdough starter. Rich in probiotics and fiber, the starter adds a subtle tang to these fudgy treats. As a sourdough novice, this recipe is one of my first attempts to creatively use my starter, and I couldn’t be happier with the chewy, chocolatey results.
As a sourdough newbie, I’ve been searching and searching for recipes and instructions for recipes that use sourdough starter. I’ve thankfully found some resources with DELICIOUS recipes! This recipe is thanks to The Little Spoon Farm’s sourdough brownies – I just altered the instructions a bit to make them a bit quicker.

Sourdough Discard Brownies freeze well – I’m all about making things that I can freeze ahead to have on hand for when company arrives. These brownies will be perfect for Summer guest. I’ll just put them in the bottom of a pretty dessert bowl with a scoop of ice cream and homemade hot fudge sauce (or maybe strawberry sauce?) – and dessert is all ready!
This is a great way to use up some extra sourdough starter! – I just hate to throw out that beautiful sourdough starter if I get an abundance of it, so this is a great way to use some of it.
Ingredients

- 1/2 cup unsalted butter
- 1 1/2 cups semi-sweet chocolate chips
- 1/2 cup cocoa powder (any kind)
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 egg yolk
- 1 cup sugar
- 1/2 cup brown sugar
- 125 grams sourdough starter discard (measure this on a food scale)
- 1 cup all purpose flour
- 1 teaspoon salt
Instructions for Chocolate Sourdough Brownies
- Preheat oven to 350 degrees and line a 9 inch square baking pan with parchment paper to form a “sling”.
- In a microwave safe bowl, melt the butter and chocolate chips. Microwave times will vary based on the voltage of your microwave. I just melted mine for 2 minutes and stirred it with a spoon and it was perfect. Once it is melted and stirred smooth, stir in the cocoa powder and then vanilla. Set aside.
- In the bowl of a stand mixer, beat the eggs, egg yolk, and sugars until frothy and smooth – about 7-10 minutes.
- Add the melted and cooled chocolate mixture and sourdough discard to the egg & sugar mixture and mix in the mixer on low until combined.
- Add the flour and salt to the bowl all at once and stir until just combined. Don’t be alarmed by how thick the batter is. That’s the way it should be!;) Drop it by large spoonfuls into the parchment lined pan and smooth wth a knife so it’s in one nice even layer.
- Bake at 350 degrees for 35-40 minutes, or until the top is slightly firm to the touch and starting to crack.
Tips & Tricks
- Let the brownies cool completely before removing them from the pan by pulling up on the parchment paper.
- To get completely square brownie pieces, make yourself a template using cardstock paper to use as a cutting guide.
- Use a large, sharp knife when cutting brownies. Heat it up by running it under water first and then drying it with a towel. Lay it down gently on the top of the brownies, and let the heat melt through to cut it. Heat it up and dry it before every cut to get beautifully cut brownies every time.
How to store sourdough chocolate brownies
Once cooled, store sourdough brownies in a tightly covered container (with a lid or plastic wrap). Store on the countertop or fridge for up to 4 days.
Freeze in a tightly covered container or zipper topped bag for up to 4 months.
