I’ve personally never been much of a fan of traditional stew made with stew meat — it’s just not really my thing. But this quick and easy hamburger stew is one my mom used to make, and it’s one she showed me after we were first married.
She made it one time when she came to visit, and I still remember pulling it out of the oven with her standing in the kitchen with me. It uses ground beef instead of stew meat and relies on simple, everyday ingredients — a few potatoes, carrots, onions (if your family likes them), and a can of tomato soup.
It’s incredibly easy to make, and whether you slow cook it in the crockpot or bake it in the oven, it makes the house smell cozy and comforting all day long. Crockpot Hamburger Stew
This cozy crockpot hamburger stew is made with ground beef, potatoes, and carrots and is perfect for chilly days and busy schedules.
Ingredients
- 1 pound lean ground beef
- 1 small to medium onion, diced
- 3 medium white potatoes, peeled and cut into 1-inch cubes
- 3 carrots, peeled and cut into 1-inch pieces
- 1 (10.75 oz) can cream of tomato soup
- 1 soup can water
- Salt and pepper, to taste
Instructions
- In a skillet over medium heat, brown the ground beef and diced onion together until the beef is fully cooked and no longer pink.
- Drain off any excess grease if needed.
- Transfer the browned ground beef mixture to the bottom of a slow cooker.
- Add the diced potatoes and carrots to the slow cooker.
- Pour the cream of tomato soup over the vegetables and meat.
- Fill the empty soup can with water, scraping out any remaining soup, and pour the water into the slow cooker.
- Season generously with salt and pepper, then stir everything together.
- Cover and cook on low for 6–8 hours or high for about 4 hours, until the vegetables are tender.

How to Make Crockpot Hamburger Stew
- Brown together the hamburger & onion until the hamburger is no longer pink. Season with salt and pepper while cooking.
- Peel and cube the potatoes and carrots.
- Layer the hambuger in the bottom of the crock pot followed by the potatoes & carrots.
- Pour over the can of tomato soup and then fill up the soup can with water and pour it over, too. (My mom always taught me to use the water to help get out every bit of soup from the can!)
- Season with more salt and pepper.
- Cover and slow cook until the veggies are tender (6-8 hours on low; 4 hours on high).
