Since then, I’ve had many people ask for recipes that we use to help on our healthy eating journey. Here are 5 that are on a regular rotation at our house.
5 Quick & Healthy Weeknight Meal Ideas
1. BBQ Burgers & Macaroni Salad
When the warmer weather rolls around, we whip off the cover on the barbecue and use it on a regular basis! Burgers or smokies are probably on the menu at least once a week. But, the question always is, “What should we have with it?” This macaroni salad is different from traditional macaroni salads and includes all kinds of healthy veggies.
And the bonus? The next day leftovers are absolutely delicious! You can add chopped deli turkey or ham to make it a stand alone lunch.
2. Chicken Fajita Wraps
If the day gets away on me and I need to cook dinner lickety split, these chicken fajita wraps are one of my favorite go to meals. They only require one pan to cook (cast iron is my favorite), and can be made as spicy (or not) as you’d like. We’ve found that we tend to eat less quantity of food now, but we love it to be FULL of yummy flavor and spice.
3. Skinny Chicken Alfredo
Pasta used to be one of my favorite foods ever! But, when I decided to change my eating habits, I wanted to figure out how to get the same flavors I loved with less calories. Spagetti squash was a delightful discovery for me. I had never even tasted it before, and was delighted with what a great substitute for fetticini noodles it was.
Then, I put together a few different recipes to come up with my own version of Skinny Chicken Alfredo. It’s a bit more time consuming with the required simmering time, but it is so worth it!
4. Chicken Tortilla Bake
Yep, we eat a lot of chicken!;) This Chicken Tortilla Bake is a recipe that can be made ahead and frozen to pull out on busy days. I’m a HUGE fan of cooking in bulk and freezing ahead. You can find out how I’ve done that in the past in this post.
However, I’ve found that now that it’s just my husband and I at home (hello, empty nest…), I do far less cooking in bulk. I’m still looking for recipes that are healthier that can be frozen in advance.
5. Spicy Lime Chicken Salad
This dinner salad is SO delicious and quick to put together. It’s full of flavor and will fill you up! Although it calls for mangoes, I substituted strawberries the other day and it was delicious. If you like things spicy like us, drizzle a little avocado & jalapeno dressing over it!
