As I’ve mentioned before, I love to prepare freezer meals so I can be prepared for busy days. This is a perfect crock pot recipe to put together quickly in a ziploc bag, and then put in the freezer until you are ready to use it. Or, if you’d like, you can make it right away. It’s very quick and easy to put together.
Unlike other crock pot sausage and peppers recipes, this one is simmered in a sweet and sour sauce with pineapple instead of a marinara sauce with Italian seasonings. It’s a nice change, and tastes great served over rice.
Ingredients for Sweet & Sour Crock Pot Sausage & Peppers

- 1 pound fully cooked kielbasa or Mennonite sausage
- 1 can (500ml) pineapple chunks, undrained
- 1/2 cups carrots, quartered lengthwise
- 1 large green pepper, cut into 1” pieces
- 1 medium onion, cut into chunks
- 1/3 cup packed brown sugar
- 1 Tablespoon soy sauce
- 1 chicken bouillon cube
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- 2 Tablespoons cornstarch
- 1/4 cup cold water
Step by Step Instructions for Crock Pot Sausage & Peppers
- If making this crock pot recipe right away, combine everything but the cornstarch and water in a crock pot. Cook for 4-5 hours on low, or until hot and bubbly.
- Then, combine the cornstarch and water in a small bowl and add to the hot mixture in the crockpot. Turn it on high for at least 15 minutes and stir occasionally. The sauce should thicken up with the cornstarch mixture and make it a wonderful sauce to serve over rice.
- To make this as a freezer meal, combine everything BUT cornstarch and water in a heavy duty freezer bag. Label it and freeze for up to 3 months. When ready to serve: Thaw overnight in the refrigerator and pour the bag full in crockpot the next day. Simmer for 4-5 hours on low. Then, combine cornstarch and water in a small bowl and add to crockpot, turned on high, for last 15 minutes, stir occasionally.
Tips for making this crock pot recipe as a freeze ahead meal
For easy assembly of this recipe, I stand up the {heavy duty} freezer bags in bowls and put the ingredients right into the bag. I like to double the recipe so I can tuck 2 of them into the freezer at once.
