Mix together this crowd pleaser cheesy hash brown casserole recipe in just minutes. Frozen hash brown potatoes baked to perfection with creamy sauce of sour cream and mushroom soup, plus a heaping helping of cheddar cheese makes this side dish full of flavor.

Ingredients

  • 2 pounds frozen, diced hash brown potatoes (I prefer diced hash browns over shredded hash browns for this recipe.)
  • 2 cups sour cream
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup melted butter
  • 2 cups shredded cheddar cheese
  • salt & black pepper to taste

Instructions

  1. Preheat oven to 350 degrees, and prepare a 9×13 inch casserole dish by spraying it with cooking spray.
  2. In a large bowl, stir together the hashbrowns, sour cream, mushroom soup, milk, melted butter, and all but 1/2 cup of the shredded cheese.
  3. Transfer the hash brown mixture into the prepared casserole dish and use a spatula to smooth it evenly in the dish.
  4. Sprinkle with the remaining cheddar cheese.
  5. Bake at 350 degrees for 1 hour, or until hot and bubbly around the edges.

Substitutions and variations for this comforting side dish:

  • Other “cream of” soups can be substituted for the cream of mushroom soup. Cream of chicken soup, cream of cheddar soup, or cream of celery soup would all yeild delicious results with this recipe.
  • You can omit the 1/2 cup milk and use another can of cream of soup for more creamy goodness in this recipe. In fact, the original Schwarties Hash Browns recipe called for 2 cans of cream of mushroom soup and no milk.
  • Turn this cheesy hashbrown casserole recipe into a one pan dinner by adding in 2 cups cooked, diced ham or cooked & diced breakfast sausage and serve it as a main dish.
  • For a decadent topping, sprinkle on the top of the casserole before baking one of the following: 1 cup shredded parmesan cheese or 1 cup panko bread crumbs or 1 cup crushed corn flakes or potato chips.
  • Use different cheeses or a mixture of cheeses in this casserole for a different cheesy sauce flavor.
