Feature Food Friday–Melissa’s Macaroni Salad
It’s not exactly barbecuing weather, but we did have one the other night. The pouring rain didn’t allow a deck-side dining experience, but we enjoyed it in our warm dining room instead.
One of my favourite side dishes to barbecued burgers is this macaroni salad. It’s different than the traditional mayonnaise-cream-dressing kind. Instead, it is full of healthy veggies and a yummy, sweet dressing.
You can make it ahead of time and let it sit in your fridge.

Melissa’s Macaroni Salad

2 cups macaroni (or penne), cooked and cooled
1 tomato, chopped
1 onion, chopped
½ green pepper
¼ cucumber
*you can add any additional veggies that you prefer
Dressing:
2/3 c. sugar
½ c. vegetable oil
1/3 cup ketchup
¼ cup vinegar
1 tsp. salt
¼ tsp. pepper
1 tsp. paprika
Whisk together all ingredients for dressing. Pour over pasta and veggies. Mix and store in fridge.
