Christmas Fudge

As soon as December 1st rolls around, my youngest son starts asking when I’m making fudge.  To say it is his favorite Christmas treat is an understatement.  It’s quite simple to make, and this year, he did all the stirring.  It worked like a charm!

In a medium saucepan, combine:

2 cups sugar, 2/3 cup evaporated milk, 1/2 cup butter, 12 large marshmallow, and a dash of salt.

Stir over medium heat until marshmallows are melted and mixture comes to a boil;  boil for 5 minutes, stirring constantly.

Remove from heat.  Stir in 1 2/3 cup semi-sweet chocolate chips and 1 tsp. vanilla until the mixture is completely blended into a smooth, shiny fudge.

Pour (quickly) into an 8 x 8 inch wax-paper lined pan.

Cool in refrigerator.  Once cooled, cut into small squares.
