I first saw the idea of Blue Cheese Nachos on a tv show featuring Rachael Ray’s Spicy Buffalo Chicken Chili. I was instantly intrigued and decided to try it myself. Ever since, these super cool-tasting chips (thanks to the blue cheese!) have become my go-to side dish whenever I serve something extra spicy.
Funny story—before making this recipe, I had never bought blue cheese before. The first time I opened the package, I gasped and exclaimed to my husband, “Oh no! This cheese has already gone bad!” He burst out laughing and kindly explained that blue cheese is supposed to look that way!
Not only is this recipe delicious, but it’s also especially pretty when made with colored tortilla chips. The vibrant reds, blues, and yellows make the melted blue cheese pop, making this dish as visually appealing as it is tasty!
