Sweet n Sour Chicken Meal for 55

Today’s Dinner Menu:

  • Sweet and Sour Chicken
  • Rice
  • Mixed Green Salad (served with a choice of 3 dressings)
  • Fresh Bread
  • Carrot Cake

Prep the day before:

Bake off two boxes of skinless, boneless chicken breasts.  Cool, dice, and place in 2 shallow hotel pans.  Cover and leave in cooler overnight.

On the day of:

Mix together the sweet and sour sauce.


Sweet and Sour Sauce:

  • 12 cups ketchup
  • 4 cups cider vinegar
  • 2 cups brown sugar
  • 3 teaspoons pepper
  • salt to taste

Add chunked red peppers, yellow peppers, green peppers, sliced carrots, and diced onions to the above sauce until it is thick and chunky.


Divide sauce between the two hotel pans, and pour over top of cooked, diced chicken.


Cover with foil.  Bake at 350 degrees for about 1 1/4 hours, or until hot and bubbly all over.

{It was delicious!  If you’d like the carrots to be a little less crunchy when finished, you could steam them a bit before adding them to the sauce.}
