I’ve always been a fan of mashed potatoes—especially with a holiday dinner. Turkey just needs a side of mashed potatoes and gravy, doesn’t it?

But these aren’t my mama’s mashed potatoes! These have a fun little twist. When I noticed a recipe for mashed potatoes with cottage cheese, my ears perked up. I’ve been loving cottage cheese lately as an extra source of protein (it’s even great with eggs!). So I gave this version a try, and we found them absolutely delightful.

Creamy Mashed Potatoes with Cottage Cheese

Creamy, fluffy mashed potatoes with a protein boost from cottage cheese—a fun twist on a favorite side dish classic.

Ingredients

  • 3 lbs Russet or White potatoes, peeled and cut into approximately the same sized chunks
  • ¾ cup pureed cottage cheese
  • 1/4 cup butter
  • 2 Tbsp milk (more as needed for desired texture)

Instructions

  1. Peel and cube the potatoes. Cover with water and bring to a boil. Cook until fork-tender.
  2. While potatoes boil, puree the cottage cheese in a food processor until smooth. (Or a blender would work, too.)
  3. Drain potatoes and add the butter. Mash roughly until the butter melts with a hand masher.
  4. Transfer potatoes to a stand mixer bowl, add pureed cottage cheese, and whip until fluffy.
  5. Add milk as needed until desired consistency is reached.
  6. Season with salt and pepper, and serve warm.
