Lemon Meringue Pie

Ingredients you'll need:

– 1 1/2 cups sugar – 1/3 cup cornstarch – 1 1/2 cups water – 3 egg yolks, slightly beaten – 3 Tbsp. butter – 1/4 cup lemon juice – 1 Tbsp. grated lemon rind – (Plus a 9 inch baked pie crust)

Step 1:

Make the cooked lemon pie filling in a medium sized saucepan and pour into the baked and cooled pie crust.

Step 2:

Whip up the meringue topping until stiff, glossy peaks form.  Pile the meringue on the hot lemon pie filling and swirl into a design.

Step 3:

Bake the pie at 400 degrees for 7 – 10 minutes.

Cool & serve. Enjoy!
