Chicken & Pepper Fajita Wraps
  • 3 skinless, boneless chicken breasts
  • 1 onion
  • 3-4 peppers, any colour
  • 1 pkg. fajita seasoning mix
  • flour tortillas
  • grated cheese
  • sour cream, optional
  • diced tomatoes, optional
  • salsa, optional
  1. Thinly slice the peppers, onion, and chicken breasts.
  2. Heat 3 Tbls. oil in a cast iron pan over medium high heat.
  3. Once the pan is hot, cook the chicken pieces in single layers. Removing each layer once it is cooked and placing it in a clean dish.
  4. When all the chicken has been cooked, add the peppers and onion to the hot pan.
  5. Stir and add a bit of water if the pan seems dry.
  6. Saute the veggies until they are crisp tender. Salt and pepper to taste.
  7. Add the cooked chicken to the veggies in the cast iron pan.
  8. Pour the contents of the fajita seasoning package onto the chicken and vegetables and add ¼ cup water.
  9. Simmer on low heat for about 15 minutes.
  10. Spoon the fajita filling into a flour tortilla. (You can warm them in the microwave if you prefer.)
  11. Add toppings of choice such as grated cheese, salsa, sour cream and diced tomatoes.
