{Healthy Recipes} Chicken Waldorf Salad

I wish I could say I love to cook.  But, I don’t.  Truth be told, if it were up to me, I would live on cold cereal and toast with dessert of Reese peanut butter cups or Mars bars…

Most of the time I get caught in the rut of quick easy meals.  Then, I realize many of my “go-to” recipes aren’t really that healthy…We really need to be eating more fruits and veggies.

Honestly, I find it exhausting and time consuming.  I would love to live in the days where “Cook” would plan meals and put them on the table.  I would gladly set the table for her…and even bring in a fresh bouquet for a centerpiece…

But, I digress…

I’m trying ~once again ~ to add some more “healthy” into our diets.  I studied dozens and dozens one “healthy cooking” cookbook someone loaned me, and bought the appropriate ingredients.

Day 1 was a disaster.  My will to eat healthy just didn’t outweigh the exhaustion I was feeling.  We had cold cereal for supper…

So, yesterday, I started early.  Right away in the morning, I popped a few chicken breasts into the oven, and put together this Chicken Waldorf Salad.  It isn’t a new recipe to us, but it is a favourite.  I was sceptical about the spices at first, but we actually love the combination of flavours.  I like to make an extra big batch so we can enjoy the leftovers for a few days’ lunches…

INGREDIENTS:

3 ounces chicken breast

vegetable broth and/or water for cooking

Curry powder, to taste

Cumin, to taste

Turmeric, to taste (I’ve never used this one)

1/2 cup grapes

1/2 cup chopped Granny Smith apple

1 cup chopped celery

1 cup sliced red pepper

1 tablespoon light mayonnaise

2 tablespoons yogurt

Nutmeg, to taste

Cinnamon, to taste

Black pepper, to taste

 

In a small saucepan, place the chicken.  Pour in enough vegetable broth to cover the chicken and add curry powder, cumin, and turmeric.  Bring the liquid to a simmer over medium heat and poach the chicken until it’s cooked through, about 10-15 minutes.  {I bake mine, covered, in the oven.}  Cool the chicken and cut it into small chunks.

In a big bowl combine the chicken, grapes, apple, celery, and red pepper.  Stir in the mayonnaise, yogurt, nutmeg, cinnamon, and black pepper and serve.
