Can this banana bread recipe be frozen?

Absolutely! This recipe freezes incredibly well. I would freeze it without the icing and frost it before you are ready to serve. Just make sure you put it in an air tight container, zip loc bag, or wrapped well in plastic wrap before you put it in the freezer.

This quick bread recipe can also be baked in mini loaf pans.

There are all kinds of cute mini loaf pans now, and this recipe can be baked in them as well. Just reduce the baking time accordingly.
